FIELD: food industry. SUBSTANCE: initially is prepared mixture which contains concentrate of kvass wort, vegetable oil, salt, sodium bicarbonate and phosphatides. Then this mixture is whipped, wheat flour being added into it. Thus prepared mass is formed and is baked to prepare wafer sheets. Then fat, citric acid, concentrate of kvass wort and wafer crumb are mixed. Thus prepared mass is whipped, sugar powder being gradually added into it to prepare filling. Said filling is spread on wafer sheets. Ratio of concentrate of kvass wort being used for wafer and filling production is 3:4. Proposed composition contains (mass): blend 0.5-0.57, concentrate of kvass wort 1.07-1.09, vegetable oil 0.16-0.162, salt 0.13-0.132, sodium bicarbonate 0.14-0.141, phosphatides 0.11-0.112, fat 32.3-32.4, citric acid 0.11-0.12, wafer crumb 5.58-5.60, wheat flour 26.7-26,8, sugar powder the rest.
