FIELD: dairy industry. SUBSTANCE: before pasteurization, colostrum cooled up to 4-6 C is treated by 20-25-% aqueous solution of salts of stabilizers with temperature 4-6 C in amount of 4.0-5.5 mas.% to colostrum protein. Then colostrum is mixed and homogenized in two stages at temperature 58-62 C and pressure 10-14 MPa on the first stage, and 2-6 MPa, on the second one. EFFECT: higher efficiency. 4 cl, 1 tbl
