FIELD: organic chemistry. SUBSTANCE: present invention describes method of preparing water-soluble physiologically miscible starch esters by conversion of starch by acid or enzymic hydrolysis into partial hydrolizate with average molecular weight in the range from 10,000 to 500,000 dalton. This hydrolyzate is acylated in aqueous solution with aliphatic -monocarboxylic acid anhydride or halide or aliphatic - dicarboxylic acid or mixture thereof and alkalizing agent till molar substitution in the range from 0.1 to 1.0 mole/mole. Salts are removed from the resulting reaction mixture. The resulting starch ester is quite suitable for alinic, especially parentheral and dietic applications.
