FIELD: alcoholic beverage industry. SUBSTANCE: ethyl alcohol of higher rectification is mixed with water of 0.45-0.55 mg-equiv/l hardness, then free-fat milk in amount of 2.3-2.5 kg per 1000 dal is introduced, and mixture is aged for 5-8 h. Then mixture is filtered through sand, and after it ascorbic acid in amount of 400 g per 1000 dal is introduced. EFFECT: higher efficiency.
