FIELD: alcohol industry. SUBSTANCE: method includes preparation of batch, saccharification in presence of enzymes, fermentation, and isolation of ethyl alcohol from wort by rectification. Method is distinguished by isolating barley-corn from soft-boiled raw material, saccharificating clarified mash and, using ultrafiltration technique, separating it into two streams in proportion from 2:1 to 0.5:1, the first one (enzyme concentrate) being recycled into saccharification process and the second being transferred into fermentation stage.
