FIELD: alcohol production.
SUBSTANCE: claimed method includes mixture preparation, cooking of starch-containing raw materials, saccharification thereof, addition of proteolitic enzyme preparation neutrase in amount of 0.5 PSU/g of raw materials at 53-55°C for 22-25 min, fermentation and ethanol recovery from beer by beer rectification.
EFFECT: alcohol production with increased yield and improved quality.
