FIELD: food-processing industry. SUBSTANCE: apparatus has heat-carrier vessel provided with closure, conveyor with perforated cells for conveying portions of product, vapor heat-exchanger for heat-carrier heating and chamber for replenishment of vessel with heat-carrier. Vessel is connected with filter, circulation pump and heat-exchanger via pipelines to define closed loop. Heat-exchanger is connected with vessel by at least two pipelines. Automatic control and regulation unit switched to closed loop is adapted for regulating temperature and level of heat-carrier in vessel, with heat-carrier level not exceeding 45 mm above closure.
