FIELD: food industry. SUBSTANCE: used as a food additive is sodium succinate for increasing of assimilability by human organism of bi- and/or trivalent metals contained in product. Besides, sodium succinate is used in the method for preparation of products with higher food value. Proposed method provides for enrichment of product with sodium succinate as a food additive. For this purpose, products taken for enrichment are main source of bi- and/or trivalent metals in ration of man's alimentation. Sodium succinate is added in the amount of not less M=81n, where 81 is mass of 1 g-equivalent unit of sodium succinate, n is g-equivalent units present in product of cation of metal. Sodium succinate is also used for preparation of potable mineralized water which contains at least bi- or trivalent ions of metals. Sodium succinate is introduced in potable mineralized water at the rate not less: X = 4.04 A + 6.67 B + 2.95 C + 4.42 D, where X is mass of sodium succinate introduced in one liter of natural water, g; A, B, C, D is content of cations of calcium, magnesium, iron and manganese, respectively, in one liter of natural water, g.
