FIELD: alcoholic beverage industry. SUBSTANCE: method involves preparation of solution of 40% vol by mixing of ethyl rectified alcohol "Extra" and water; introduction in it of 65.8-% sugar syrup and infusion of dry modified yeast in the amount of 0.9-1.1 l prepared by pouring out bakery yeast with 20-% solution of acetic acid in ratio 1:5; ageing for 2-3 h at periodic mixing; addition of rectified alcohol at the rate of preparation of 60-% solution; additional ageing for 24 h, discharging the infusion and its filtration. Solution is passed through carbon-cleaning battery, strength is corrected, and then control filtration is conducted. All ingredients are used in the following ratio per 1000 dal of prepared product: bakery dry yeast, 0.09-0.11 kg; acetic acid, 0.09-0.11 l; 65.8-% sugar syrup, 11-12 l; ethyl rectified alcohol "Extra" and water. EFFECT: higher biological value; broadened assortment of vodkas.
