FIELD: liqueur and vodka industry. SUBSTANCE: rye grains are mixed with wheat grains (amount of each component is 0.25 kg), poured with an aqueous-spirituous solution (proof is 50%) in the ratio 1:10 and infused for 5 days at stirring 2 times per 24 h for 20-30 min. Infusion is poured off and filtered off through fabric filter. An aqueous-spirituous solution (proof is 40%) is prepared from rectified ethyl alcohol "Ekstra" and purified drinking water by mixing in the aqueous-spirituous tank. Citric acid is dissolved in 2-3 l of softened water and sodium hydrocarbonate is added at constant stirring. After complete dissolving obtained solution is filtered through fabric filter and added into the aqueous-spirituous tank. Granulated sugar in the amount 10 kg per 100 dal of vodka is added as 65.8%-th sugar syrup or an aqueous solution into the aqueous-spirituous or finishing tank. An aqueous-spirituous solution is stirred thoroughly, proof is corrected and fed into supply tank and then into carbon cleansing battery for purification at the filtration rate up to 40 dal/h for fresh carbon and up to 30 dal/h for regenerated carbon and then into finishing tank. Rye and wheat spirituous infusion filtrate of the 1-st pouring off is added to the finishing tank at stirring. Tank content is stirred thoroughly, proof is controlled and corrected if necessary and after final (control) filtration is fed for pouring. For production of 1000 dal of vodka components are used in the following ratio: citric acid, 0.09-011 kg; sodium hydrocarbonate, 0.10-0.30 kg; 65.8%-th sugar syrup, 11.00-12.00 l; wheat and rye an aqueous-spirituous infusion of the 1-st pouring off, 3.90-4.10 l; rectified ethyl alcohol "Ekstra" and purified drinking water, the balance to obtain proof 40%.
