FIELD: alcoholic beverage industry. SUBSTANCE: vodka contains the following ingredients in ratio, kg/1000 dal of prepared product: pressed bakery yeast, 0.3-0.5; sugar, 9.5-10.5; iodized salt, 0.09-0.15; aqueous-alcoholic liquid from ethyl rectified alcohol "Extra" and water, the balance. Yeast is held in aqueous solution of iodized salt and then infused in aqueous-alcoholic mixture of 60% alcohol strength. Yeast infusing in salt reduces quantity of moisture and it alleviates separation of yeast biologically active complex in aqueous-alcoholic medium. Yeast starch adsorbs iodine, and it enriches vodka with iodine. Assimilation of biologically active complex in medium is accelerated in the presence of iodine. In the presence of sugar bitter taste of iodine is reduced, and vodka assumes mild and pleasant taste.
