FIELD: food-canning industry and wine-making. SUBSTANCE: apparatus has supporting structure with bearing unit, hollow shaft mounted inside it, and carbon dioxide source. Hollow shaft supports pivoted hollow stirrer. Stirrer hollow communicates with carbon dioxide source through shaft hollow. Stirrer is provided with supersonic nozzles connected to its hollow and located on opposite sides of shaft. There are also swirlers at nozzle inlets. Swirler outlets are disposed in planes parallel to shaft axis and are directed to opposite sides perpendicular to shaft axis. Stirrer bears two symmetrically fastened constant magnets. Apparatus can be applied as equipment for wine cellars. EFFECT: extended process capabilities due to enabled simultaneous separation of substances prone to form both crystalline and colloidal turbidities. 2 dwg
