FIELD: confectionery industry. SUBSTANCE: liqueur glazed caramel contains nonglazed caramel coated with chocolate glaze which consists of syrup, granulated sugar, citric acid, alcohol and flavor. Used as a flavor is "Vishnya" (Cherry) of Firm ROBERTET. Caramel additionally contains red colorant "Ponso" and berry liqueur in alcohol. Chocolate glaze additionally includes substitute of cocoa products from grape seeds at the following ratio of components, mas.%: chocolate glaze, 24.00-25.20; syrup, 25.50-30.50; citric acid, 0.30-0.40; alcohol, 0.64-2.40; flavor "Cherry" of Firm ROBERTET, 0.02-0.09; red colorant "Ponso", 0.002-0.003; berry liqueur in alcohol, 0.50-0.70; granulated sugar, the balance. Proposed caramel is of good taste quality with stable aroma and pleasant color characterized of fresh cherry. Caramel has prolonged storage life equal to 4 months.
