FIELD: food industry. SUBSTANCE: licorice roots are extracted with aqueous ammonium solution, extract is separated from vegetable stuff, concentrated, and extracted material is precipitated with ethanol. Separated precipitate is freed from residual ethanol through extraction with liquid acetylene at superatmospheric pressure. Ethanol-containing extract is separated and rest of extractant is evaporated from precipitate by reducing pressure to normal. EFFECT: reduced ethanol consumption and increased production safety.
