FIELD: technology of separating sweet substances from licorice root used in food industry and medicine. SUBSTANCE: method involves acetone removal from separated extract at its concentration and/or removal from sediment of ethanol residue. The process is conducted by extraction with liquid acetylene at pressure higher than atmospheric one. Then extract is withdrawn and pressure is decreased to atmospheric. EFFECT: reduced consumption of acetone and/or ethanol; increased safety of process.
