FIELD: food processing industry, in particular concentrate production for soft drinks.
SUBSTANCE: claimed method includes continuous countercurrent extraction of plant and fruit-and-berry raw materials in ratio of 1:5-1:7. Plant raw materials are extracted with 35-40 % water-alcohol solution at 40-60°C in ratio of raw materials and extractant of 1:3-1:4. Mixture contains (mass %): Origanum Vulgare L. land part 4.2-5.0; Salvia officinalis L. land part 4.23-5.53; Mentha piperita L. land part 5.71-7.31; Attemisia land part 4.23-5.53; Alnus incana Moench stem 4.23-5.53; Inuba helenium root 1.1-1.5; Acorus calamus root 1.1-1.5; Althaea root 0.2-0.5; and balance: extractant. Fruit-and-berry raw materials are extracted with 20-25 % water-alcohol solution at 50-65°C in ratio of raw materials and extractant of 1:0.5-1:0.7. Mixture of plant and fruit-and-berry extracts in boiled down in vacuum at 50-60°C to obtain concentrate containing 15-20 % of dry matter and alcohol fraction, which is recycled into extraction step. Method of present invention makes it possible to accelerate concentrate production process by 1.5-2 times and to increase yield by 1.5-2 times due to optimum process parameters.
EFFECT: accelerated method for production of soft drink concentrate with increased yield of target product.
