FIELD: sugar production. SUBSTANCE: method comprises evaporating fillmass and subsequently cooling it under stirring in fillmass mixers and introducing chemical agent which reduces saccharose solubility, fillmass is rocked by determined amount of water. Last crystallization sugar is then separated from molasses by centrifugation. Chemical agent is ethyl alcohol and the latter is added in admixture with water fed into fillmass mixers to rock fillmass. Mixture comprises 75-85% of water and 15-25% of alcohol. In the course of crystallization process, 15-30 % of boiled fillmass from first fillmass mixer are centrifuged with backflow returning to the same fillmass mixer when cooling process is begun.
