FIELD: alcoholic beverage industry. SUBSTANCE: method involves preparation of infusion from lemon peel of Ist and IInd dischargings in terms of 10.0 kg of dried lemon peel per 1000 dal of prepared product. Citric acid is dissolved in water, while lemon oil, in rectified alcohol in ratio 1:10. Colorant "Tatrtazin" E 102 is dissolved in 40-% aqueous-alcoholic solution in ratio 1:100, separated into two equal parts, one of which is mixed with lemon peel infusion, while the other, with dissolved lemon oil. In blend tank introduced are infusion of lemon peel with colorant, ethyl rectified alcohol "Extra", a part of corrected water, 65.8-% sugar syrup, dissolved lemon oil with colorant and water for bringing up of blend up to preset volume and 40-% strength. The blend is mixed after introduction of each ingredient for 3-5 min, and after of blending completion, for 15-20 min. The blend is corrected, if necessary, filtered, aged for 3-4 h and filtered with average speed of 45-65 dal/h sq.m on pressure filter "Progress" with using filter cartoon "T" or "KTF-1P" as filtering material. Ingredients for preparation of bitter liqueur "Dinastiya tsar Saltan" are used in the following ratio per 1000 dal: citric acid, 9.8-10.2 kg; colorant "Tartrasin" E 102, 0.01-0.04 kg; lemon peel infusion of Ist and IInd dischargings, 159.8-160.2 l; lemon oil dissolved in rectified alcohol in ratio 1:10, 9.8-10.2 l; 65.8-% sugar syrup, 114.8-115.2 l; ethyl rectified alcohol "Extra" and corrected potable water, the balance, up to 40-% strength.
