FIELD: food industry, particularly, fat-and-oil industry for production of food products of special purposes. SUBSTANCE: fat-and-oil product comprises vegetable phospholipids prepared by fourfold mixing of preliminary heated food vegetable phospholipids with organic solvent. Before the third mixing, solution of mixture of citric and succinic acids in flooded acetone is added in solvent in the amount of 5-10% to phospholipids mass. Mixture taken in the amount of 1-2.5% to phospholipids mass has the following ratio of acids (1:1)-(3:1) Then separation of phases is conducted into solution of neutral lipids in solvent and phospholipids with their subsequent drying.
