FIELD: fish industry. SUBSTANCE: method involves subjecting fish to the action of cooling medium and preservative. Cooling medium contains C(1-4)-monocarboxylic acids and/or (mono-/di) or (tetra) salts of alkali and/or earth metals of mentioned acids. Cooling medium may be aqueous solution of C(1-4)-monocarboxylic salts of concentration: 5-30% of salts and 95-70% of water, or two-component composition containing preservative and ice. According to preferred version, brine or two-component composition with ice contains potassium formate, and/or potassium diformate, and/or formic acid. Brine pH value may be regulated by adding acid or (di) salt equivalent to (mono) salt used in brine. Method allows fish product with low NaCl content to be obtained.
