METHOD FOR MANUFACTURING HYDRATED FROZEN SUNFLOWER OIL Russian patent published in 2017 - IPC C11B3/00

Abstract RU 2626748 C1

FIELD: food industry.

SUBSTANCE: at the first stage, the initial press sunflower oil is analyzed for the content of phospholipids in it. As a hydrating agent, instead of process tap water, water vapour condensate of 3÷5% from the oil weight is used in the form of the aqueous solution of sodium chloride mineral salt with the concentration of not more than 1 g/l, subjected to electrochemical activation in a diaphragm electrolythic cell, to produce an acid anolyte with the pH of 4 and an alkaline catholyte with the pH of 9-10. The hydration is carried out in 2 stages sequientially, first with the acid anolyte with the pH of 4 in the amount of 1.5÷2.5 wt % to the oil weight, into which citric acid is added in the amount of 0.1±0.01 wt % to the oil weight, then - with the alkaline catholyte with the pH of 9-10 in the amount of 1.5÷2.5 wt % to the oil weight. Before separating the phospholipid emulsion, sedimentation is carried out within at least 8 hours, the hydrofuse is separated, the hydrated oil is dried. Thereinafter, into the hydrated dried oil with the temperature of 80°C, 2% of the oil weight of wax are added in the pre-melted state; the oil is stirred and cooled rapidly at the rate of 9±0.5°C/hour up to +40±2°C, then slowly at the rate of 3±0.5°C/hour to the temperature of +10±1°C, holding at this temperature for at least 4 hours, then the oil is slowly heated at the rate of 2÷3°C/hour to 18÷20°C, the filtration of the prepared oil for removing the wax is carried out through a cotton cloth on a filter press at the pressure of 1.0÷2.0 atm, and the oil is packed in bottles with the nitrogen protection.

EFFECT: invention allows to improve the quality of oil, to isolate phospholipids, including non-hydratable ones, from it more efficiently, to reduce the pro-oxidative capacity, and to remove the wax.
