FIELD: food industry.
SUBSTANCE: at the first stage, the initial press sunflower oil is analyzed for the content of phospholipids in it. As a hydrating agent, water vapour condensate of 3-5% from the oil weight is used in the form of the aqueous solution of sodium chloride with the concentration of not more than 1 g/l, subjected to electrochemical activation in a diaphragm electrolythic cell to produce an acid anolyte with the pH of 4 and an alkaline catholyte with the pH of 9- 10. The hydration is carried out in 2 stages sequentially, first with the acid anolyte with the pH of 4 in the amount of 1.5-2.5 wt % to the oil weight, into which citric acid is added in the amount of 0.1±0.01 wt % to the oil weight, then - with the alkaline catholyte with the pH of 9-10 in the amount of 1.5-2.5 wt % to the oil weight. Then, the sedimentation is carried out within at least 8 hours, the hydrofuse is drained, and the oil is dried. Further, the hydrated dried oil is cooled, first rapidly at the rate of 9±0.5°C/h up to 40±2°C, then slowly at the rate of 3±0.5°C/h up to +5±1°C. When pumping into the crystalliser, a flat oil pipe with the through opening thickness of 0.6 cm and the width of 16.0 cm from a non-magnetic material, on which five identical coils are wound sequentially with the interval of not more than 0.4-0.5 m of copper wire with the diameter of 5 mm and the number of turns of 10, and installed in the direction of the earth's magnetic field, and the terminals of the coils are connected to direct current with the voltage of 220 V, so that the directions of the electric-field vectors created by the magnetic fields of the coils coincide with the direction of the electric-field vector of the earth's magnetic field. Then, being held at +5±1°C for at least 2 hours, the oil at the rate of 2-3°C/h is slowly heated to 18-20°C; the filtering of the prepared oil is carried out through a cotton cloth on a filter press at the pressure of 1.0-2.0 atm, after which the oil is packed into bottles with the nitrogen protection.
EFFECT: improving the quality of sunflower oil, reducing the content of phospholipids down to their absence.
