FIELD: alcoholic beverage industry. SUBSTANCE: method of production of vodka "Staraya Astrakhan" involves preparing an aqueous-spirituous solution to obtain vodka of 40% proof from rectified ethyl alcohol "Luks" and purified drinking water. Prepared an aqueous-spirituous solution is stirred thoroughly, passed through carbon-cleansing battery at the filtration rate up to 40 dal/h for fresh carbon and 30 dal/h for regenerated carbon. Sugar as 65.8% sugar syrup or an aqueous solution is added into sorting or finishing tank. Prepared vodka is fed to the finishing tank. Glucose and succinic acid are dissolved in purified drinking water separately. Glucose solution is added into finishing tank. Vanillin is dissolved in rectified alcohol, mixed with succinic acid solution, kept for 10-15 min after glucose addition and added into the finishing tank at stirring. Content of the finishing tank is stirred, corrected if necessary and fed to pouring with obligatory control filtration. Ready vodka has the following ratio of components, kg/1000 dal: glucose, 4.5-5.5; sugar, 11-13; succinic acid, 0.09-0.15; and also, l: vanillin spirituous solution (1:100), 0.03-0.06 and rectified ethyl alcohol "Lux" and purified drinking water up to the proof 40%. Proposed invention involves the combined use of components and procedures. It ensures to obtain vodka with high organoleptic indices and an antitoxic effect and also curative-prophylactic properties.
