FIELD: meat industry. SUBSTANCE: agent is designed for keeping quality of carcasses or parts of carcasses of slaughter animals. The agent comprises aqueous solution of initial composition of active substances containing at least one sugar, at least one inorganic phosphate, and at least one from organic food acids and activator selected from acetic or lactic acid at the following ratio of ingredients, mas.%: initial composition of active substances containing at least one sugar, at least one inorganic phosphate, at least one organic food acid selected from ascorbic or isoascorbic acid or inorganic salts of these acids, citric acid, sorbic acid, or their mixtures, 0.1-5.0; activator selected from acetic or lactic acid, 0.1-5.0; aqueous solution, the balance. Initial composition of active substances contains 40-70 wt.pts of sugar, 15-35 wt.pts of inorganic phosphate and 0.5-10 wt.pts of organic food acid selected from ascorbic or isoascorbic acid, or inorganic salts of these acids, citric acid, sorbic acid or their mixtures. Content in activator of acetic or lactic acid and specific combination of ingredients allows to improve microbiological properties of processed carcasses or parts of carcasses.
