FIELD: fat and oil industry. SUBSTANCE: method for hydration of dark-colored nonrefined vegetable oil involves mixing nonrefined oil with hydrating agent, exposition of prepared mixture, its separation for hydrated oil and phospholipid emulsion and the following drying hydrated oil and phospholipid emulsion. Sodium chloride an aqueous solution in the concentration 0.5- 2.0% is used a hydrating agent taken in the amount providing ratio phospholipids in nonrefined oil to hydrating agent = (1:2)-(1:3). Mixing is carried out in thin, rotating by spiral film with thickness 0.1-0.5 mm at temperature 25- -70 C for 20-60 s, at film rotation film frequency 10-40 s-1 and exposition of mixture for 5-20 min. Invention provides the enhancement of quality of hydrated oil due to more significant removal of phospholipids and reduction of oil color index value.
