METHOD OF VODKA PRODUCTION Russian patent published in 2001 - IPC

Abstract RU 2177031 C1

FIELD: alcoholic beverage industry, particularly, production of "Velikaya Rossiya" vodka. SUBSTANCE: Mixing of alcohol and water is carried out in mixer with the following additional mixing in centrifugal pump. Flows of alcohol and water are simultaneously entered the mixer wherever high turbulence is created due to counter motion of flows. It provides for favorable hydrodynamic conditions for mixing and dissolving alcohol in water. Prepared aqueous-alcoholic solution escapes from mixer with knowingly increased content of alcohol by 0.5-1.5%. For preparing standard strength of aqueous-alcoholic solution, additional flow of water is introduced in pipeline connected mixer with centrifugal pump. Said solution is directed to carbon-cleaning battery consisting of three series-connected columns-adsorbers for processing with activated carbon under conditions of pseudoboiling layer. Aqueous-alcoholic solution is fed by pump from the last column-adsorber to hydraulic cyclone where large carbon particles are separated. Then vodka is directed to filtering installations consisting of frame flannel filters (filters of preliminary coarse filtering) and filters of final (fine) filtering with hydraulically compressed layer of quartz sand with grain size of 200-500 mcm. Cloudberry stems infusion is prepared by one-time infusion in aqueous-alcoholic liquid. Infusion of cloudberry stems, xylitol preliminarily dissolved in some quantity of softened water, sugar in the form of sugar syrup with 65.8% concentration preliminarily filtered are introduced in vodka in finishing tank. Content of tank is thoroughly mixed after introduction of each ingredient, corrected, if necessary, and directed for bottling with obligatory control filtration. Prepared vodka "Velikaya Rossiya" contains the following ingredients per 1000 dal: xylitol, 1.8-2.2 kg; infusion of the Ist decantation of cloudberry stems, 1-2 l; 65.8% sugar syrup, 8-8.1 l; ethyl rectified alcohol "Extra" and potable corrected water, the balance, up to 40% strength. EFFECT: broadened assortment of vodkas with treatment-and-prophylactic properties in case of diabetes; higher biological value of vodka due to synergistic interaction of ingredients and methods of production. 3 cl, 1 tbl, 3 ex
