METHOD OF VODKA PRODUCTION Russian patent published in 2000 - IPC

Abstract RU 2157832 C1

FIELD: liqueur and vodka industry. SUBSTANCE: method involves preparing an aqueous-spirituous solution to obtain ready vodka with proof 40%. Alcohol and water are mixed in small-scale mixer of type "pipe-in-small diameter tube" or in mixer of special construction followed by additional stirring in rotary pump. Flows of alcohol and water taken in volume ratio = 1.0:(1.38-1.44) are added into mixer simultaneously where high turbulence providing favorable hydrodynamic conditions for mixing and dissolving alcohol in water is produced. Obtained an aqueous-spirituous solution is escaped from mixer with known to be increased alcohol content by 0.5-1.5%. An aqueous-spirituous solution is fortified by addition of water flow into pipe-line connecting mixer with rotary pump. Obtained aqueous-spirituous solution is fed to carbon-cleansing battery consisting of three successively connected column-adsorbers. An aqueous-spirituous solution from the last column-adsorber is fed into hydrocyclone where separation of carbon large particles is occurred. Then vodka is fed to filtration units consisting of filters of preliminary crude treatment and filters of final (fine) filtration with hydrocompressed quartz sand filtering layer (grain size is 200-500 mcm). Honey is diluted preliminary with softened water in the ratio 1:5, stirred thoroughly, brought about to boiling point and cooled. Then apple, rose fruits aqueous-spirituous infusions of the 1-st pouring off and honey solution are added to vodka into finishing tank. Tank content is stirred thoroughly after addition of each component, corrected if necessary and fed to pouring with obligatory control filtration. Ready vodka has the following ratio of components, l/1000 dal of ready product: apple aqueous-spirituous infusion of the 1-st pouring, 0.8-1.0; rose fruits aqueous-spirituous infusion of the 1-st pouring, 0.3-0.4 and also honey, 4.5-5.5 kg; rectified ethyl alcohol "Luks" and softened drinking water, the balance to obtain ready product with proof 40%. Proposed method ensures to obtain vodka with enhanced biological activity and nutrient value. EFFECT: improved quality, broadened assortment of biologically active vodkas. 1 tbl, 3 ex
