VODKA AND METHOD FOR PRODUCTION THEREOF Russian patent published in 2002 - IPC

Abstract RU 2181143 C1

FIELD: alcoholic beverage industry. SUBSTANCE: vodka contains following ingredients (per 1000 dal): fructose 3,0 kg, refined sugar in the form of syrup or aqueous solution 8.0 kg, citric acid 0.1-0.2 kg, sodium bicarbonate 0.1-0.2 kg, glycerol 0.2-0.3 kg, first decantation rice infusion 3.2 l, ethyl alcohol and drinking water - to 40% alcohol concentration. Citric acid is dissolved in 2-3 l of softened water and solution is added at continuous stirring to sodium bicarbonate solution. Resulting solution is filtered through cloth filter and charged into tub, wherein water-alcohol solution was preliminarily prepared from drinking water and alcohol in amounts ensuring vodka with 40% alcohol concentration. Refined sugar in the form of 65.8% syrup or aqueous solution is then charged. Thus obtained mixture is filtered through activated carbon at rate 40 dal/h. After that, the following components are leaded into adjustment tank: fructose solution, glycerol dissolved in 50% vodka at 1:5 ratio, and also filtered through cloth filter first-decantation rice infusion (49%) prepared by infusion of rice groats in 50% aqueous alcohol solution at 1:10 ratio for 5 days with periodical stirrings for 20-30 min, decanted volume of infusion constituting 80% of water-alcohol solution poured. Contents of adjustment tank is then stirred and resulting vodka is subjected to control filtration. Fructose is dissolved in softened water or in 49% vodka. To prepare water-alcohol solution, natural-origin drinking water with hardness up to 1 mole/cu.m and softened (corrected) drinking water with pH 7.8 and hardness up to 0.2 mole/cu.m is used. Finished high-quality vodka is characterized by soft taste and specific vodka fragrance with implicit shade of subtropical flora smell. EFFECT: improved consumer's quality and reduced harmful consequences after its consumption. 7 cl, 1 tbl, 4 ex
