Invention relates to a specific preparing caffeine free extracts but containing polyphenols obtaining from epigallocatechin in their natural ratio. These extracts can be used alone or in combination with lipophilic antioxidants, sulfurized amino acids or oligocomponents showing biochemical or nutrient significance. The use of these new extracts alone or in combination with other active components show the profit for food, pharmaceutical and cosmetic fields and ensures to obtain high-effective antioxidant showing a differentiated cytotoxic effect.
