FIELD: alcoholic beverage industry. SUBSTANCE: method involves preparation of a solution from ethyl rectified alcohol "Extra" and potable corrected water in terms of producing vodka of 40-% strength. A filtrate of aqueous-alcoholic infusion of soya beans in amount of 5.2-5.6 l, refined granulated sugar in the form of sugar syrup with concentration of 65.8% or in the form of aqueous solution are introduced into the solution. After thorough mixing, the solution is pumped in a supply tank where it is aged for less 2 h. Then the solution is directed for filtration through a carbon-cleaning battery consisting of two filters loaded with quartz sand, and a carbon column loaded with carbon. Filtered vodka is collected in finishing tank, and after control of its strength and transparence, vodka is directed for bottling. The filtrate of aqueous-alcoholic infusion of soya beans is prepared by the following method. Soya beans are preliminary soaked in water for 11-13 h, liquid is decanted, soya beans are thoroughly washed, ground and flooded by aqueous-alcoholic liquid of 50-% strength in ratio 1:15. Then prepared mixture is infused for 2-4 days and decanted with preparation of an emulsion. 10-% solution of acetic acid is introduced into said emulsion and aged for protein coagulation with the following decantation of clarified infusion and its filtration. If necessary, additionally introduced into the solution is sodium hydrocarbonate for providing the solution alkalinity within 1.0-1.5 ml of solution of hydrochloric acid with concentration of 0.1 mole/cu.dm of hydrochloric acid per 100 mm of the solution. Ingredients consumption per 1000 dal of vodka is the following: soya beans, 0.4-0.6 kg; acetic acid, 0.015-0.02 l; refined granulated sugar, 9-11 kg; ethyl rectified alcohol "Extra" and potable corrected water, in terms of 40-% strength of prepared vodka. The invention allows to prepare vodka with higher biological value as soya beans are a source of valuable mineral substances, microelements and vitamins.
