FIELD: fat and oil industry, analytical chemistry. SUBSTANCE: invention relates to analysis and control of foodstuffs, in part, fats and fat-containing products. Method of assay involves sampling the product to be analyzed, isolation of fatty phase with an organic solvent. Hydrolysis of the fatty phase is carried out in the range of temperature 25-40 C followed by methylation reaction in the presence of sulfuric acid. Extraction of fatty acid methyl esters is performed with isooctane followed by evaluation of the quality of analyzed products taking into account the total composition of fatty acids and their isomers. Invention ensures to differentiate species of fats and oils and estimate the usefulness of foodstuffs for usage. EFFECT: improved method of assay and analysis. 3 dwg, 4 tbl
