FIELD: biotechnology. SUBSTANCE: method involves addition of bifidogenous whey syrup prepared by fermentation of cleared condensed whey to defatted milk followed by sterilization of mixture, cooling to temperature 37 C and addition of a single wire inoculating loop with pure culture of bifidobacteria and fermentation up to formation of clot with acidity 55-60 T. Invention can be used in production of milk-base probiotic foodstuffs. Invention allows to simplify production process, reduce process time and increase amount of bifidobacterium cells in milk.
