SUBSTANCE: invention is related to biotechnology and method for reduction of content and/or removal of diglyceride from food oil, which includes a) mixing of food oil with substrate of acyl groups acceptor and diglyceride:glycerine-acyltransferase, which does not depend on fatty acid coenzyme, besides diglycerideglycerin-acyltransferase, which does not depend on fatty acid coenzyme, is a ferment that is able to transfer acyl group from diglyceride into glycerin in food oil. Diglyceride:glycerine-acyltransferase preferably contains fragment of aminoacid sequence GDSX, where X means one or several following amino-acid residues L, A, V, I, F, Y, H, Q, T, N, M or S. Invention is also related to application of diglycerideglycerine-acyltransferase, which does not depend on fatty acid coenzyme, which is a ferment that is able to transfer acyl group from diglyceride into glycerin in food oil, in process of food oil production in order to reduce content and/or removal of diglyceride from specified food oil, and to use of specified ferment in production of food product that contains food oil, to improve properties of specified food product crystallisation.

EFFECT: improved efficiency of removal or reduction of diglyceride from oil.
