FIELD: alcoholic beverage industry. SUBSTANCE: vodka production process includes preparation of "assortment" mixing drinking water with rectified ethyl alcohol and introducing vegetable-origin additives, in particular pumpkin fruit processing products, subsequent adjustment of product strength, filtration, and bottling. Mixing of ethyl alcohol with drinking water is effected at 18-22 C. Filtration process is performed twice: first through purification column filled with mordenite and then through sand filter. Prior to be adjusted strength of vodka, water-alcoholic (1:10) glucose solution is added and vegetable-origin additive is, more particularly, (i) water-alcoholic infusion of the first drainage of preliminarily crushed whole pumpkin fruits obtained after double infusion of the latter with wateralcoholic liquid (65 vol % alcohol) and (ii) fragrant alcohol obtained by single distillation of water-alcoholic infusion of the second drainage. Following proportions of ingredients are used, l per 1000 dl of final product: water- alcoholic infusion of the first-drainage crushed pumpkin fruits, 60-65; second-drainage infusion fragrant alcohol, 20-25; water-alcoholic (1: 10) glucose solution, 10-12; rectified ethyl alcohol "Extra" and drinking water, the balance.
