FIELD: liqueur and vodka industry. SUBSTANCE: an aqueous-alcoholic solution with the strength 40% is prepared in sorting tank by mixing rectified ethyl alcohol "Ekstra" and purified drinking water where sugar as 65.8% sugar syrup or an aqueous solution is added. An aqueous- -alcoholic solution is stirred thoroughly and fed to treatment with activated carbon in carbon-refinery battery at filtrate rate up to 40 dal/h on fresh carbon and up to 30 dal/h on regenerated carbon and then vodka is fed into finishing tank. Preliminary 0.5 kg of rice per 1000 dal of ready product is poured with 5.0 l of an aqueous-alcoholic solution with the strength 50%, infused for 4.5-5.5 days, infusion is poured off and filtered. Dry ginseng extract "Relikt" is dissolved in purified drinking water, added to rice filtrate infusion and kept for 20-30 min at constant stirring. Prepared mixture is added into finishing tank with vodka feeding simultaneously, vodka strength is controlled and corrected if necessary. Vodka is subjected for control filtration and bottling and components of vodka are used in their following ratio per 1000 dal of ready product: rice an aqueous-alcoholic infusion, 3.5-4.5 l; ginseng dry extract "Relikt", 0.1-0.3 kg; 65.8% sugar syrup, 17.0-17.5 l; rectified ethyl alcohol "Ekstra" and purified drinking water, the balance, up to the strength 40%. Proposed method allows preparing vodka with enhanced organoleptic indices using cereal raw and high content of biologically active substances, to enhance its prophylactic properties and to expand assortment of vodkas conferring to vodka weak aroma of chicory and after taste of acorn.
