METHOD FOR PRODUCTION VODKA "MARIINSKIE PROSTORY" Russian patent published in 2003 - IPC

FIELD: liqueur and vodka industry. SUBSTANCE: an aqueous-alcoholic solution is prepared in sorting tank with the strength 40% by mixing rectified ethyl alcohol of the highest purity and purified drinking water where sugar as sugar syrup in concentration 65.8% or as an aqueous solution is added, stirred thoroughly and fed to treatment in carbon-refinery battery at filtration rate up to 40 dal/h for fresh carbon and up to 30 dal/h for regenerated carbon. Vodka is fed into finishing tank and stirred thoroughly. Wheat bran aqueous-alcoholic infusion of the I-st blend is prepared by pouring 0.4 kg of wheat bran with 8.0 l of an aqueous-alcoholic liquid with the strength 60%, infusion for 4.5-5.5 days, pouring off infusion and its filtration. Preliminary vanillin is dissolved in rectified alcohol in the ratio 1: 100 and added in batching regime to wheat bran infusion. Prepared mixture is added to vodka in the process of its through stirring in finishing tank. Vodka is controlled for the strength and corrected if necessary and subjected for control filtration and the following bottling. Components of vodka are used in the following ratio per 1000 dal of ready product: sugar syrup in concentration 65.8%, 11.0-12.0 l; wheat bran an aqueous-alcoholic infusion of the I-st blend, 5.5-6.5 l; vanillin (1:100), 0.08-0.12 l; rectified ethyl alcohol of the highest purity and purified drinking water, the balance, to the strength 40%. Proposed method provides preparing vodka with improved stability in storage and reduced cost and expansion of assortment of vodkas conferring to vodka weak chocolate-butter after taste and muscatel aroma. EFFECT: improved preparing method, valuable properties of vodka.
