FIELD: liqueur and vodka industry. SUBSTANCE: an aqueous- alcoholic solution is prepared in sorting tank with the strength 40% by mixing rectified ethyl alcohol "Ekstra" and purified drinking water where sugar as sugar syrup with concentration 65.8% or as an aqueous solution is added. An aqueous-alcoholic solution is stirred thoroughly and fed to treatment in carbon-refinery battery at filtration rate up to 40 dal/h for fresh carbon and up to 30 dal/h for regenerated carbon. Preliminary natural honey is dissolved in purified drinking water, brought about to boiling, filtered in hot state and cooled to temperature of environment. Vanillin is dissolved in rectified alcohol in the ratio 1:100. Infusion of the I-st blend is prepared by pouring 0.5 kg of brewery barley malt with 5 l of an aqueous-alcoholic liquid with the strength 50%, infused for 4.5-5.5 days, infusion is poured off and filtered. Malt infusion and vanillin solution are added to honey solution successively and after each addition mixture is kept for 20-30 min followed by addition of vodka into finishing tank and mixture is stirred thoroughly. Then strength is controlled, corrected it if necessary and subjected for control filtration followed by bottling. Components of vodka are used in the following their ratio per 1000 dal of ready product: brewery barley malt infusion of the I-st blend, 3.5-4.5 l; vanillin (1:100), 0.08-0.12 kg; natural honey, 3.5-4.5; sugar syrup with concentration 65.8%, 28.0-29.5 l; rectified ethyl alcohol "Ekstra" and purified drinking water, the balance, to the strength 40%. Method provides preparing vodka with high biologically active properties and organoleptic indices, expansion of assortment of vodkas eliciting prophylactic properties and conferring to vodka after taste of mal coffee and weak aroma of chocolate.
