FIELD: food industry.

SUBSTANCE: invention relates to food industry. The gum base of chewing gum includes a short chain carboxylated compound ether of RC(O)O group highly substituted starch. R stands for hydrogen or a linear or branched alkyl group with 1-6 carbon atoms or an alkenyl group with 2-6 carbon atoms. The short chain carboxylate of highly substituted starch is plasticised with a compatible plasticiser. Additionally proposed are a chewing gum and a versions for production of plasticised elastomer of short chain carboxylate of highly substituted starch to be applied in the chewing gum base. The method involves mixing of short chain carboxylate of highly substituted starch with plasticiser and the mixture maintenance for at least three days or the mixture pressing.

EFFECT: invention allows to produce a gum base based on starch with acceptable chewing properties and without usage of potentially toxic solvents and reagents.
