SUBSTANCE: invention relates to ice-cream production equipment. Coating cutting unit for frozen confectionary products contains a coating cutting tool and at least one gripper to hold the product by stick during coating cutting. Said grip comprises a locking member that limits the distance to which the stick can be advanced into the grip, and prevents gripping of the frozen confectionary product by the edible part when the article is pressurized by stationary knives. Coating cutting tool comprises a frame defining an area for placing an article for receiving a frozen confectionary product with at least partially coated coating containing a stick; funnel for article for its direction into central position in area for product placement; set of side knives, containing at least two knives, fixed on opposite sides of area for product placement. Also disclosed is a method for cutting a coating on a frozen confection and a frozen confection product produced thereby.
EFFECT: invention allows to cut coatings from gel of frozen confectionary products both with one layer of coating and with multiple layers and reducing quantity of rejects during cutting.
