FIELD: food industry.
SUBSTANCE: the present innovation deals with obtaining protein of improved properties to be applied in manufacture of food products. The suggested method for obtaining protein out of oil cake of oil-producing plants deals with extracting albumin out of initial raw material with common salt solution at concentration being not above 7%, separating out the residue as oil cake paste against protein solution, precipitating albumin out of protein solution with hydrochloric acid solution at pH 3.5-4.5 followed by separating out an albumin, washing with water at 1:10 ratio and drying. Moreover, as initial raw material one should apply flax seeds oil cake. And before washing out albumin should be dried and reduced up to finely dispersed state. Oil cake paste should be extracted with sodium hydroxide solution in drinking water at pH 8.5-9 at obtaining oil cake pulp to separate out protein solution and precipitate globulin with hydrochloric acid solution at pH 3.5-4.5 followed by separating out globulin by washing it out with water, and drying. The innovation enables to widen raw material base to obtain food protein and develop the method for its efficient extraction.
