FIELD: food industry.
SUBSTANCE: disclosed is a method of producing vegetable protein from flax seed cake, characterized by the fact that raw material is milled, removal of water-soluble non-protein mucous substances by treatment of cake with acidified aqueous solution of HCl pH 3.5–4.0 at ratio of 1:15 for 0.5–1 h, separation of mucus solution from cake, washing cake, separation of washing water, extraction of protein from mucusless cake of flax seeds with 0.5–0.8M sodium chloride solution in an alkaline medium at pH 9–10 and temperature 20–40 °C for 1–3 hours, separation of protein extract, precipitating protein from the extract with an acid, separating the precipitated protein by centrifugation, washing and drying.
EFFECT: invention ensures production of vegetable protein from flax seed cake with high protein yield and reduction of technological process time.
