FIELD: food industry.
SUBSTANCE: disclosed is a method of producing vegetable protein from flax seed cake, characterized by the fact that raw material is milled, removal of water-soluble non-protein mucous substances by treatment of cake with acidified aqueous solution of HCl pH 3.5–4.0 at ratio of 1:15 for 0.5–1 h, separation of mucus solution from cake, washing cake, separation of washing water, extraction of protein from mucusless cake of flax seeds with 0.5–0.8 M sodium chloride solution in an alkaline medium at pH 9–10 and temperature 20–40 °C for 1–3 hours, separation of protein extract, precipitation of protein from extract with acid, separation of precipitated protein by centrifugation, its washing and drying, at the stage of protein extraction from mucusless cake it is treated with ultrasound with frequency of 40 kHz during 20–30 minutes.
EFFECT: invention ensures production of vegetable protein from flax seed cake with high protein content and reduced time of technological process.
