SUBSTANCE: invention relates to an industry in which natural coloring products are used, in particular to the food, feed, and chemical industries. The coloring product in the form of a phenolic mixture containing flavonoid having coloring in accordance with RAL 3004, 3005 or 3006 colors is obtained by a reaction of adding laccase to an aqueous and/or alcoholic fraction containing synapic acid obtained from plants and/or parts of plants, preferably from seeds and/or fruits of cabbage plants (Brassicaceae), in the presence of oxygen.

EFFECT: proposed coloring product has intense coloring and is stable for a long time, while it is suitable for use in the food and feed industry for coloring and enriching products with phenolic substances, as well as for accurate research in analytical chemistry.
