FIELD: fish industry.
SUBSTANCE: method involves preparing mixture including fish farce, salt, dried milk, alginic acid salt solution, and vegetable oil; providing homogenization, packaging, sealing and sterilization procedures. Edible salt and dried milk are simultaneously added in preselected amounts into fish farce. In order to produce emulsion, sodium alginate or sodium-calcium alginate is solved in warm water until predetermined concentration of polysaccharide is reached; vegetable oil is introduced into resultant solution and mixture produced is aerated until homogeneous emulsion is obtained; raw farce mixture is then added into alginate-oil emulsion in an amount of 45-60% and homogenization procedure is performed; mass produced is charged into cans and sterilized.
EFFECT: provision for obtaining of dietary product of increased biological value.
