FIELD: food processing industry, in particular method for production of soft caramel.
SUBSTANCE: soft caramel is prepared by blending and boiling down of sweetener, plasticizer, emulsifier and structure forming agent. Mixture of acidic polysaccharides with preparation obtained from biomass of Mortierella zynae micromycete according to claimed technology is used as emulsifier and structure forming agent.
EFFECT: decreased consumption of emulsifier and structure forming agent.
