FIELD: food processing industry, in particular production of soft caramel.

SUBSTANCE: claimed method includes blending and boiling of at least sweetener, plasticizer, emulsifier, and structure-forming agent up to predetermined dry matter content. As emulsifier and structure-forming agent mixture of acidic polysaccharides and preparation obtained from biomass of Mortierella gamsii micromycete according to claimed technology is used. Ratio of polysaccharide and preparation from biomass is approximately equivalent to free carboxylic group number of abovementioned polysaccharide and hydroxyl group number of abovementioned preparation. Claimed method makes it possible to change simultaneously structure-forming agent and emulsifier.

EFFECT: reduced consumption of processing additives.
