FIELD: baking industry, in particular, production of dietary and therapeutic bakery products.
SUBSTANCE: bread composition comprises swollen grain ground to average particle size of 100-300 micron, germinated oats and germinated soya, which are ground to average particle size of 100-200 micron, and amaranth seeds crushed and/or ground in oil medium until coat is damaged, ground sea kale, emulsifier and water. Components are used in predetermined ratio. Method involves soaking grain for swelling thereof; soaking soya and oat for germination; and soaking amaranth seeds; grinding swollen grain into particles of 100-300 micron size and germinated oats and soya into particles of 100-200 micron size; kneading dough from components envisaged by receipt; proofing dough; placing in pans and baking. Bread produced from said composition and by said method is saturated with squalene which is adapted to saturate individual's organism with oxygen to intensify metabolism, improve blood flow and provide enhanced anti-carcinogenic and anti-microbial action. Squalene as part of bread composition selects organism's weak regions and renders action primarily upon such regions.
EFFECT: improved prophylactic and therapeutic effect produced by bread obtained from such composition.
