FIELD: food-processing industry, in particular, production of flower-shaped decorative members from vegetable and fruit pieces used for decoration of various dishes for home or festive table.
SUBSTANCE: method involves carving flower-shaped member from hard kinds of vegetable or fruit piece; providing flower in the form of rows of semi-round or sharpened petals, said rows being placed in layer-by-layer manner; before beginning of carving petals, selecting type of cutting trough-shaped tool of round or angular shape depending on kind of flower selected; forming petals in circular manner on top or side surface of vegetable or fruit piece by providing slot or furrow of desirable length of petal L in vegetable or fruit piece body by reciprocating motion of selected cutting tool; setting cutting tool at an angle to cutting plane so that its upper ribs do not protrude beyond surface to be cut; adjusting width of petal by extent of penetration of cutting tools; forming subsequent rows of petals; arranging cutting tool at different angles to cutting plane in order to produce petals of different thickness; dipping flower produced into low-concentration acetic solution for storage.
EFFECT: improved quality and wider range of decorative members.
