FIELD: kitchen equipment for cutting and producing of ornamental articles from vegetables and fruits used for decoration of table and dishes.
SUBSTANCE: three-dimensional angular knife for carving has angular working member provided with cutting edge and fixed by means of shank within holder. Working member is made in the form of angular trough with variable acute angle between its walls defining upon junction rounded rib. Free ends of trough walls are beveled at an acute angle to trough rib, and cutting edge is formed on bevel. Optimal ratio of angle β between trough walls to angle λ between lower rib and cutting edge is selected within the range of from 1.6 for knives with large angle between trough walls to 2.8 for knives with smaller angle between trough walls. Holder is made barrel-shaped and is equipped with metal cap having cut for passage of working member shank.
EFFECT: wider operational capabilities, simplified operations for decorative cutting of vegetables and fruits, convenient and reliable usage, reduced labor intensity, increased speed and improved quality of cutting vegetables and fruits.
