FIELD: food production process.
SUBSTANCE: method of producing decorations from vegetables and fruits includes production of rough piece, formation of artistic elements in rows on the surface of the rough piece with the help of the knife, removing the excessive elements between them, changing the leaning angle of the knife and deepening it when moving from one row to the other. The knife is set in outward tip position with thumb located underneath and pointing finger on top, on the blade carrier grasping it in the front part zone. Herewith the middle finger is on blade bedding of the knife, and ring finger is used as a test rod and when touching the processing the fruit it monitors its form.
EFFECT: increase of the cutting effectiveness with simplification of artistic and decorative cutting process for decoration from vegetables and fruits, comfort increase of fruits processing, cutting speed and quality increase, improvement of the quality and ornamentality of the finished product.
